Festive ‘Healthy-ish’ Pumpkin Chocolate chip cookies

I am all about balance! Training hard, so close to your goal but have an occasion like thanksgiving coming up?

I have a HUGE sweet tooth.. or like 10 of them haha so I know that on sunday im going to want to dig into all the goodies on the table so I have set myself up for success!

They say if you don’t plan, than plan to fail! So a few experiments went down on the weekend but this is it!

WARNING ** they ARE gooey when they come out, be sure to let them COOL on the TRAY for atleast 10 minutes before attempting to move them, then keep in a airtight container for freshness*

ps, this is also so simple that even Brian read it over and goes ‘that’s it?’ πŸ˜‰

what you need
1 Cup Whole wheat flour ( all purpose if you have to)

3/4 tsp Baking powder

1tsp Corn starch

1 1/4 tsp cinnamon

1/8 tsp salt
2 tbsp coconut oil ( unsalted butter melted and cooled slightly)

1 Tsp Vanilla Extract
1/2 cup sugar

3/4 can of pumpkin PUREE ( not pie filling πŸ™‚ )

3-4 tbsp chocolate chips

NEXT

-preheat oven to 325

-in one bowl mix all the dry ingredients, in another mix all the wet ingredients ( don’t over mix)
– stir in the chocolate chips
– Drop onto baking sheet ( lined with wax paper)

cook for 12-15 minutes

mine made about 20 πŸ™‚
